My latest obsession in the bread-making field is this cheesy beer bread. It is so easy to make, it’s quick, it’s no fuss, it doesn’t involve kneading / finding a warm place in the kitchen / figuring out what in the name of God lukewarm is supposed to mean. Even though the ingredients are pretty common, the result exceeds all expectations – a lovely crunchy cheesy crust and a dense, elastic and flavorful center. Even though the only fat-source is the cheese (and a low-fat version, to be more accurate), the taste is so unexpectedly rich and the flavor amplifies with every bite. Nothing reminds me of my childhood as grilled corn does. Now that I think of it, I can even taste its unmistakable flavor and its sweet and warm smell. I remember taking the hot corn right from the burning coal and devouring the whole thing, without even waiting for it to cool down. Since that particular moment I had hundreds, maybe thousands of them and I enjoyed with the same pleasure each and every single one of them. This time I chose to grill the corn to enhance its sweetness and then I dressed the knobs with a herb butter mixture. There’s not much to say about the herb butter, maybe just the fact that that beautiful bouquet of herbs came from my own garden. I wish I could describe how divine the combination was! I’ve finally found a recipe for cream of carrot soup that doesn’t taste like baby food. It is made from roasted carrots and fennel, two vegetables that go so well together. I must confess that I picked my carrots from my garden this morning, on a warm summer rain. It sounds enchanting, doesn’t it? So, I chopped the vegetables, I drizzled some olive oil and I roasted them in the oven, just to enhance their flavor. After they were nice and brown, I simmered them in vegetable soup, with red onion, wine and thyme. At the end I flavored the soup with some fragrant roasted garlic. The result was a delicious and hearty soup. The funny thing is that only long after I enjoyed this divine soup I realized that it was in fact vegan. My family never suspected! Duck Breast with Wine-Cherry Sauce

I’ve always loved duck roast for its unmistakable flavor, its reach and exquisite taste and its mouth-watering crispy skin. But I’ve always felt discouraged to try to cook it. It seemed too technical and challenging to get the perfect seared duck breast. Last year I finally gave it a try and was the best decision ever. Little by little I managed to understand the meat, its physics and its chemistry. And it’s not difficult at all. If you pay attention to a couple of things, your seared duck will always turn out perfect.

I like my seared duck medium to well done, with a divine crunchy skin and a juicy, pinkish, flavorful meat. In order to get this finish I brown the breast in a cast iron skillet in its own fat, and I finish it in the oven for 6 minutes. After duck has rested for 5 minutes, I slice it and I serve it with a sweet and sour wine and cherry sauce. It is a wonderful combination! Continue reading Duck Breast with Wine-Cherry Sauce

Tortilla de Patatas with Sweet Potatoes and Kalamata Olives

I make tortilla de patatas for dinner at least once a week and I usually serve it with a salad. The best part of this simple dish is that the leftovers (if there are any and that’s one big “IF”) are even better the next morning, for breakfast. This morning I had a sudden craving for tortilla and I just had to make one. Another wonderful thing about this dish is that regarding the ingredients, sky is the limit; you can use anything from fresh or frozen veggies and herbs to dairy or meat products.

For this particular tortilla I used sweet potatoes, Kalamata olives, red bell pepper and onion. To make this recipe lighter, I boiled my potatoes instead of frying them and the result was a hearty and colorful omelette full of bold flavors. Baked Milanese Pork Chops With Aïoli Sauce and Arugula Salad

I might have the perfect recipe for Milanese Pork Chops! Why do I dare to call them “perfect”? Because these beauties have a flavorful crispy crust, so crispy that you would never believe that they are baked and not fried. The juicy and tender meat is coated with a golden crust made from whole-wheat bread crumbs, parmesan and thyme.
